The Liege waffle originated when the prince-bishop of Liege requested a special pastry with pearl sugar. It originated in the early 1800s, and the recipe quickly spread. It is the most popular waffle sold by vendors, due to its ease of transport. The Liege waffle is commonly topped with strawberries, bananas, whipped cream, chocolate syrup, ice cream, and more in the US.
